The Mangalitsa
Our herd of Mangalitsa (or Mangalica) pigs is genetically pure and are pasture fed. Their pasture is supplemented by 10-gallons of organic buttermilk a week, locally produced feed, spent brewers grain from the Bitterroot Brewery, and organic vegetable trimmings from the Good Food Store in Missoula. They are a heritage breed from Hungary and produce an exceptionally marbled cut of meat with tremendous stores of fat back and leaf fat. It was “developed in the mid-19th century by crossbreeding Hungarian breeds from Szalonta and Bakony with the European wild boar and the Serbian Šumadija breed. The Mangalitsa pig grows a thick, woolly coat similar to that of a sheep. The only other pig breed noted for having a long coat is the extinct Lincolnshire Curly-coated pig of England”. They are considered a “Lard pig” by some, with it taking much longer to come to butcher weight (275lb+) than most all varieties of pig found on the market today.
